My rule of thumb is that unless you keep things very simple, use good components, and design carefully, it is difficult to have net voltage errors below 1% of the ADC fullscale -- excluding the sensor itself, and this goes for any sensor, not just thermistors. If errors concern you, then you really need to anticipate what kind of errors to expect in your system, and find ways to deal with them.
